Christmas Dinner Recipe: Glazed Ham – A tasty alternative to turkey this year is a juicy ham joint soaked in a ginger beer marinade. This combination is sure to tickle your taste buds if you feel like shaking things up this festive season. So, start a new tradition this Christmas and follow the recipe below. Ingredients * 1 (3kg) ham joint, on the bone. (If yours has no bone, you will need to adjust the cooking times given here subtantially) For the marinade * Grated root ginger * 10 cloves * 6 star anise * 4 Tsp All Spice * 10 juniper berries * 1 nutmeg * Enough ginger beer to cover For cooking * Whole celery * 1 orange * 1 onion * 2 jars (350g each) of apple jelly * bottle of lager * Bay leaves Method 1. Put all the marinade ingredients and the ham in a large tub or pan overnight to soak. 2. The next day, put soaked ham in a large pot, cover with the marinade and enough cold water to cover. Add the celery, 1 halved orange, 1 whole onion and bay leaves and bring to the boil. 3. Reduce heat and simmer for 1 hour 15 minutes, then allow the ham to rest and cool in the liquid for a further hour. 4. Drain and pat dry. Keep reserve liquid for stock. 5. Heat oven to 170°. Take the skin off the joint and trim the fat until only 1cm remains. Score a criss cross patern on to the fat with a sharp knife. Place the ham in a roasting tin. Melt the apple jelly in a pan and pour over. Stud the joint with whole cloves and 2/3 star anise. 6. Roast in oven for 1 hour and 15 minutes
