Lebanese Ground Lamb Mixture – Kibbeh

ingredients
2 c. bulgur*
6 c. cold water
1 lb. lean ground lamb or beef
1 medium onion, peeled and finely chopped
1 tsp. cayenne pepper
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. ground ginger
1/4 tsp. ground coriander
1/4 tsp. ground cumin ice water

method:
1.Place bulgur in a large bowl. Add 6 c. cold water and set aside for at least 1 hour.
2. After soaking, place bulgur in a colander and rinse under cold running water. Press bulgur between your hands to remove excess water and set aside.
3. In large bowl, mix meat and onion. Add spices and knead until mixture forms a smooth paste.
4. Put a few ice cubes in a small glass of water. Knead bulgur into meat, adding small amounts of ice water when needed to keep mixture smooth.
5. Cover and refrigerate overnight before using.
