Nicko’s Kitchen – VIDEO RECIPE : MEATBALLS part 1

Nicko cooks his famous Spaghetti & Meatballs! Ingredients – MEATBALLS: – 500g ground beef mince, 2 tablespoons grated parmesan cheese, 3 tablespoons of dried italian seasoning, 1 egg, 1 tablespoon garlic paste, 1 cup stale breadcrumbs, 1/4 cup fresh chopped basil, and pinch of salt and pepper. SAUCE: – 1 diced onion, 2 rashers of bacon diced, 1 cup of mushrooms diced, 1 can of diced tomatoes, 1 tablespoon garlic paste, 2 tablespoons tomato paste, 1/4 cup of fresh chopped parsley. PASTA: – Use half of a standard size pasta package. Use angel hair or thin pasta preferably. 2 litres of water to boil, 1 tablespoon salt.

    @dani222606 Wow…you don’t think others know about meatballs? What planet are you from? The Chinese have made meatballs for centuries. Pasta is certainly nothing new. Do you have any idea of the spice trade? Or maybe you are completely ignorant of facts. If you had said “What would an Italian know of making an Australian dish?”……that would make me wonder. Sounds like you just make Ramen and Spaghetti O’s.

    A matter of opinion – I simply do not brown meatballs first. Make your mix – heck you can use turkey if you want,. 80/20 is fine but you might need to skim. In a rather deep 12″ skillet do your onions garlic…mushrooms whatever, Get them ready for the sauce, whatever it is. Even Hunt’s has a large can of pasta sauce for about $1.50. Fine. Put it in. Add the raw meatballs. Make sure you have enough sauce to cover. Do not stir….let them baste, really, for 30-45 minutes. Awesome tender meatballs

    @dani222606 . Dani, even though I’m not a big fan of Nico’s – I just have to tell you that Australia is a very multi-cultural country. As a result, our cuisine has been influenced by countries all over the world. This is obviously Nico’s version. We all have our own versions, a little less of something, a little more of something – but he’s not claiming to be making the traditional spagetti meatballs. He’s showing you the way HE does it.
