Grilled Chicken With Garlic Sauce

1/3 cup minced parsley
5 garlic cloves, minced
1/3 cup lemon juice
1/4 cup olive oil
1 tsp paprika
1 tsp cumin
1 dash cayenne pepper
1 1/2 lbs chicken breast slices, pounded 1/4″ thick
1 Tbs olive oil, for brushing chicken

Method:
In a blender, blend all sauce ingredients together.
Grill or broil the chicken breasts 6 inches from the heat source, brushing with olive oil to keep moist. Grill on each side about 4 minutes.
Top each slice with some of the sauce (about 2 to 3 tablespoons per slice).

Chicken Pepper-Lime Stir Fry

Cut 1-1/2 lbs. chicken breast into strips or cubes suitable for stir-frying.
Mix the following ingredients together in a cup or bowl
1/2 tsp. shredded lime peel
1/4 cup lime juice
1 tbl. cooking oil
2 cloves garlic, minced
1 tsp. black pepper
1/2 tsp. dried thyme
1/2 tsp. crushed basil
1/4 tsp. salt

Jamaican Jerk Shish Kabob Chicken (grilling)

Jack does Grilling Video #2. Here is the recipe: JAMAICAN JERK SHISH KABOB CHICKEN COOKING TIPS: soak sticks to prevent burning, seperate veggies from meat. Ingredients: 3 chicken breasts (about 2 pounds) For the seasoning: 1 large bunch scallions, trimmed and cut into 1-inch pieces 3 shallots, peeled and rough chopped for about 1/2 cup 4 cloves garlic, peeled and rough chopped 1 to 2 scotch bonnet chiles or more to taste, seeded (for a hotter flavor, leave the seeds in) 1 teaspoon fresh thyme leaves, or 1/2 teaspoon dried thyme leaves 2 teaspoons coarse salt (kosher or sea) 1 teaspoon freshly ground black pepper 1/2 teaspoon ground allspice 1/4 cup vegetable oil or water, or as needed Blend all ingredients (except thyme leaves) in spice chopper or food processor. Cut chicken into mouth size pieces. Place chicken, jerk seasoning, and thyme leaves into zip lock and marinate from 4 hours to overnight. Cut veggies for skewers. Skewer veggies on separate skewers than chicken. Grill until done.

Chicken Kolhapuri

Ingredients :

1 kg chicken
2/3 cup curd
1 tsp turmeric powder
2 tsp red chilli
1 tsp garlic paste
salt to taste
1 tsp lime juice
2 tsp corn or peanut oil
1 bay leaf
2 pieces cinnamon
6 pieces cloves
1/2 tsp crushed black pepper 2 medium onions
2 tsp grated coconut
1 large cut tomato
2 tsp oil
1 tsp coriander leaves

Method :

Mix turmeric powder, red chillies, garlic paste, salt, and lime juice with curd. The marinade is ready.
Add the cut chicken pieces to the marinade and leave aside for half an hour. Heat oil in pan.
Add bay leaf, cinnamon, cloves, crushed black pepper and chopped onions.
Saute till onions turn translucent.
Add grated coconut. Saute till coconut color changes.
Add tomatoes. Cook for 10 minutes. Cool and puree the mix in a blender.
The Kolhapur masala is ready.
Heat oil and add the marinated chicken to the pan. Cook for 25 minutes on low fire. Stir regularly.
Add paste and simmer on low flame for 5 minutes.
Kolhapur chicken is ready. Garnish with coriander leaves.

South Indian Chicken

Ingredients :

1 kg chicken
2 large onions
10-12 whole red chilies
Mustard seeds 1 tbl spoon
Sauf 1tbl spoon
Curry leaves 1\2 cup
Turmeric powder 1 spoon
1\2 a spoon of dals(channa and urad mix)
Salt to taste

Method :

Marinade the chicken in salt and turmeric powder for at least half an hour.
Heat a vessel pour oil and add the mustard seeds curry leaves and the dals.
Fry for a few seconds and add the chillies.again fry for a few seconds and add the marinated chicken and fry on high heat for 10-15 minutes steering continuously.
In between add the sauf and more salt if required.
After 15 minutes if u feel the chicken is not cooked completely pour ½ a cup of water and cook it covered for another 10 minutes or till the water dries up completely and the oil starts leaving the sides.
